Allow it to heat up for a few minutes until it reaches around 325°F (163°C). In a separate heatproof bowl, combine the dried red chili flakes, Sichuan peppercorns, toasted sesame seeds, Chinese five-spice powder, and salt. Once the oil has reached the desired temperature, carefully pour it over the chili mixture in the bowl. Be cautious as the oil will sizzle and release steam. Stir the mixture well to ensure the spices are evenly coated in the oil. Allow it to cool for about 10 minutes. Meanwhile, heat a small skillet or pan over medium heat. Add the minced garlic and ginger, and toast them for a few minutes until fragrant. This step adds extra flavor to the chili oil. Pour the toasted garlic and ginger into the bowl with the chili mixture and oil. Stir well to combine all the ingredients thoroughly. Let the chili oil cool to room temperature. As it cools, the flavors will infuse into the oil, creating a rich and spicy condiment. Transfer the Chinese chili oil to a clean, airtight jar or container.
